Ghee
Ghee, a type of clarified butter, is more than just an ingredient in South Asia – it’s an integral part of life. Used in daily cooking, in candles for religious ceremonies, and as a natural medicine, ghee is stocked in every Nepali pantry.
Ghee is produced in households and factories across Nepal. It’s made by removing the water from butter made from cow, buffalo or yak milk to yield pure milk fat. Production methods have changed little from the traditional process, in which butter is boiled over a constant heat and the solid proteins strained away from the liquid ghee.
Ghee production provides good income and employment opportunities for landless and marginalised people across Nepal. MEDEP supports ghee producers in Nawalparasi and Ramechhap, providing both entrepreneurship and technical skills training, assisting with the purchase of necessary technology and equipment, helping to improve the marketability of the product and building market linkages.
Ghee is available in both wholesale and retail quantities from Saugaat Griha, the sales outlet of micro, cottage and small entrepreneurs’ products at Tripureshowar, Kathmandu.
